Pigeons were used in a wide variety of 18th-century dishes and were considered a delicacy at banquets. Beyond their culinary appeal, pigeons and their consumption were also believed to have medicinal or protective properties, particularly against gout, trembling and the plague (Johann Heinrich Zedler, "Universal-Lexicon aller Wissenschafften und Künste", Halle/Leipzig 1731–54, vol. 42, pp. 154–166).
