Swans have been produced in various models and sizes. The 1753 Inventory of the Confectionery at Pförten Castle, the ancestral home of Count Heinrich von Brühl, the Manufactory Director and patron of the legendary "Swan Service", listed 31 swans of various sizes, "Cap. 20 An Feder Viehe 24 Grosse Schwane, 4 Kleine dgl. 5 Ganz kleine dgl.", which were obviously kept there as ornaments for the dessert table (Pietsch 2006, p. 234).
